In the Charmat method, also known as Martinotti method for Moscato, there is a unique alcoholic fermentation starting exclusively from the Must, into stainless steel autoclaves. It takes at least 30 days and can last up 180 days! The wine is kept under pressure during fermentation, which traps the carbon dioxide and results in a sparkling wine. This method helps preserve the fresh, fruity characteristics of the wine.
